Good Food: Turkey Meatballs

I rant and rave about how much I love Turkey. I strive to feed my family of five healthier–more tasteful options and I put this one together with a mix of items that I pulled out of my stockpile

These turkey meatballs are absolutely yummy! Lots of flavor and healthy!

This recipe is quite easy..and soooo good!

1 cup Caramelized onions
1  cup Parsley
8-10 Basil leaves
4-5 Thyme sprigs (chop)
4-5 leaves Sage (sparingly)
1 Tablespoon Fresh Garlic
Crushed Red Pepper (to taste)
1 Cup Parmesan
1 Cup Mozzarella
Fontina (Sticky but delish!!!)
1 Tablespoon Whole Grain Mustard

Please note: I do not know measurements. I usually just throw in what I feel is right :)

:: Place all ingredients desired into ground turkey (I.E. herbs, cheese, aromatics, etc). Only mandatory procedure is for every 1lb turkey is 1 whole egg and 1/2 cp bread crumbs. Mix well and chill till mixture is cold throughout. Make balls to desired size and then place them on a sheet pan in the fridge until set.
(This step will ensure that the meatballs will hold there shape during cooking.)

:: Heat a skillet and add half olive oil and half canola oil to coat the bottom of the pan fully. Once oil just starts to smoke, add balls carefully (DROPPING THEM AWAY FROM YOU WILL REDUCE OIL SPLASHING) to the hot pan and brown on both sides.

:: Drain balls of all excess fat and place them in a sauce of your choice to simmer on the stove for roughly an hour.

:: You can also bake in a Casserole dish on 350 for about an hour and a half. Serve on a hoagie with cheese or a pasta of your liking.

Enjoy :)

Did you just come up with that recipe from whatever you had in your stockpile? If so, I’m really impressed. Me, I’ve been taking the easy route by picking up a couple of bags of turkey meatballs at Trader Joe’s for spaghetti night! The Trader Joe’s meatballs are just about as large as the ones you made – but of course I think your homemade turkey meatballs would probably give Trader Joe’s a run for their money! :)

Thanks for sharing…

I’m so glad you posted a recipe showing how you used your deals! I was just thinking that my menu planning has been lacking since I got into couponing. Maybe we can use the SCS forum for sharing recipes that go with the weekly deals…?!

Thanks for the idea! I was just thinking about what I should do with all the Turkey im getting. I just made hamburger helper with turkey and it tasted good (my fiance still misses the beef flavor though..)

I must try this recipe this weekend! Turkey is not my usual meat of choice, but I did get some ground turkey from the Albertsons deal last week and plan on picking more up at Vons. I need to find more turkey recipes…guess I should try yours first. They do look yummy!

Not having made very many things with ground turkey, I made these today and they were very soft and mushy when I bit into them. Im wondering if I did 50% beef/ %50 turkey if it would taste firmer? The flavor was great though.

You could do that. You may have cooked them for too long. We have a very old stove and sometimes we must cook things longer. :)

If I cook the meatballs in the casserole dish do I add sauce while cooking or no sauce ?

Thank you so much Josie,

Your blog is now my one and only blog I go to I saw this yesterday and decided to stop @ the store to pick up the ingredients I didn’t have @ my stockpile like herbs and ground turkey. The funny thing is my 3 boys don’t eat ground turkey but I went ahead and bought the ground turkey and decided not to let them know the ingredients until after they were done with dinner. I wanted to see their reaction after dinner. Well, to make a long story short my boys did notice the different flavor but didn’t stop them from eating the whole pot of meatballs I made last night for dinner. I did tell them it was ground turkey and all they wanted to know if was going to make it for dinner again tonight…

Thank you so much for everything you do on your blog. As a working mother of 3 growing boys that play football I have to make sure I have dinner made everyday after because it is very expensive eating out every night. This new section you have on your blog will definitely safe me more money and time. I get to spend more time with my boys. We made a deal I will the meatballs again tonight for dinner as long as they help me make dinner and clean up after dinner…

Thank you again and again for everything that you do
